Lemon, Basil & Chia Salad Dressing

I don't know about you, but fresh basil tastes like summer to me! This is a great, light, summery & refreshing salad dressing and with the addition of chia seeds packs a great dose of Omega3 and Protein!
  • Juice of 1 lemon
  • 1 Tbsp water
  • 3/4 tsp Chia Seeds
  • 1 Tbsp Extra Virgin Olive Oil (I used a Basil infused oil which added an extra 'hit' of flavour, but plain oil works great too)
  • 1 1/2 Tbsp White Balsamic Vinegar
  • 1 Tbsp finely chopped fresh basil
  • 1 Tbsp honey
  • Salt & Black Pepper to taste

  1. Soak the chia seeds in the Lemon Juice & Water for minimum of 20 minutes until they start to gel up
  2. Mix in all other ingredients and whisk well
  3. Add Salt & Pepper to taste
