Ingredients
- Juice of 1 lemon
- 1 Tbsp water
- 3/4 tsp Chia Seeds
- 1 Tbsp Extra Virgin Olive Oil (I used a Basil infused oil which added an extra 'hit' of flavour, but plain oil works great too)
- 1 1/2 Tbsp White Balsamic Vinegar
- 1 Tbsp finely chopped fresh basil
- 1 Tbsp honey
- Salt & Black Pepper to taste
Directions
- Soak the chia seeds in the Lemon Juice & Water for minimum of 20 minutes until they start to gel up
- Mix in all other ingredients and whisk well
- Add Salt & Pepper to taste
